Sharks fins are collagen.
And the major component of collagen is actually Chondroitin Sulphate.
And chondroitin sulphate is a type of heteropolysaccharide.
Chondroitin sulphate is heteropolysaccharide made up of alternating beta linkages between N- acetylglucosamine and D-glucuronic acid.
What is heteropolysaccharide?
Heteropolysaccharide is actually repeated polymer of disaccharide.
In layman terms, heteropolysaccharide is carbohydrate.
Since it forms the big portion of collagen and found in shark fins, Sharks fins is supposed to be cheap because simply it is carbohydrate.
Sharks fins = Collagen = Chondroitin Sulphate = Heteropolysaccharide = CarbohydrateBut why should it be expensive when it is just adding of soy sauce, some other starchy items, and traces of sharks fins or rather carbohydrates.
Yeah besides to pay the poachers for their effort for small people trying to catch a huge animal for only a small portion of their meat.
And it leads me to the point that sharks need not have to extinct when we make our collagen that tates and bites like shreds of sharks fins.
